Blondies

 Ingredients

1 pack of Master Mix

4tbsp (60g) butter

1 egg

1 chocolate pack (60g of chocolate)

 

Prep time: 5 minutes

Bake time: 20 minutes

Total Cook time: 25-30 mins

 

Method

1. Preheat your oven to 180⁰C 


2. In a medium bowl, add your butter and melt in the microwave for 1 minute, stopping every 15 seconds to mix it so it doesn't burn as it browns. Or brown the butter on the stove top in a small saucepan.

3. To the browned melted butter add your half your chocolate chips and add your egg and whisk till light, then quickly add your mix and whisk till smooth. You want to work quickly with blondies, so the mix enters the melted butter while it's still warm.

4. Once all incorporated, you u can add in any additional items you want here, like chopped nuts or broken pieces of your favourite chocolate.


5. Brush your 6 inch baking tray with some oil, (disposable trays don't need added oil) then tip in your batter and smooth out the mix so it's evenly spread in the tin.

 

6.Top the mix with your remaining chocolate chips or chopped chocolate. 


7. Place your filled tray in the centre of the preheated oven and bake for 18-20 minutes. 
You'll know its ready when the top is firm enough to tap and when you lightly press on the centre, it doesn't sink in.


8. Bring out your tray of Blondies and leave to rest for at least 15 mins. I know I know... just try to resist... or chuck them in the fridge.


For fudgy blondies, when you insert a toothpick into the centre, it will come out smeared . If it comes out clean, it's overcooked and you'll have something cakey to enjoy instead.


Remember that while the blondies are out of the oven and cooling down, they will be firming up, so don't be worried if they seem slightly undercooked at first, as long as the middle doesn't sink down too much, it's ready. 


Once cooled, turn out of the tin, slice and enjoy. This should get you 8 lovely fudgy blondie pieces.
