Vegan Fudgy Brownies

Ingredients
1 pack of Master Mix
60g of Chocolate
1/4 cup butter
1 banana/ 3tbsp applesauce/ 3tbsp vegan yoghurt

Prep time: 10 minutes
Bake time: 25 minutes
Total Cook time: 35 mins

Method


1. Preheat your oven to 180⁰C 


2. In a medium bowl, add your butter and chocolate chips (save a few to top) and melt in the microwave for about 20 seconds. Stir to melt and incorporate. 


3. Add 1 soft mashed banana  or 3 tablespoons of applesauce  (you wont taste the fruit but if you're really not a fan, you can use your preferred egg replacer or some plant based thick yoghurt. 


4. Mix all the wet ingredients together, then pour in your pack of Master Mix and whisk till smooth.


5. Top the mix with your remaining chocolate chips or chopped chocolate. 


6. Brush your 6 inch baking tin with some oil, then tip in your batter and smooth out the mix so it's evenly spread in the tin.


7. Place your filled tin in the centre of the preheated oven and bake for 20- 25 minutes. 
You'll know its ready when the top is firm enough to tap and when you lightly press on the centre, it doesn't sink in.


8. Bring out your tin of brownies and leave to rest for at least 20 mins. I know I know... just try to resist... or chuck them in the fridge.


For fudgy brownies, when you insert a toothpick into the centre, it will come out smeared . If it comes out clean, it's overcooked and you'll have a cakey brownie to enjoy instead.


Remember that while the brownies are out of the oven and cooling down, they will be firming up, so don't be worried if they seem slightly undercooked at first, as long as the middle doesn't sink down too much, it's ready. 


Once cooked, turn out of the tin, slice and enjoy. This should get you 8 lovely brownie pieces.
