Vegan Beignets


 Vegan Beignet 70g (2 1/2 oz) vegan butter
500g (1 1/4 lb) plain flour
1 teaspoon baking powder
70g (2 1/2 oz) unrefined molasses sugar
2tbsp thick plain Yoghurt
260ml (9 fl oz) oat milk
vegetable oil for frying

 

Vegan Beignets are super light, like eating a cloud and refined sugar free.

The key to these is the right sizing and fry on medium heat. Too big and the light batter sops up oil, too small and it burns or crisps easily. I used a tbsp scoop.
